Peach State says: Bored? Dinner Time Experimentation

There is nothing wrong with a little experimentation in cooking…it leads to great recipes and opens the floods gates to creativity. A little bit of this and a dash of that, stir in a pinch or two of these spices and “BAM!” a new recipe is formed. The above pictured item is one of my new favorite items for my kitchen. It is a Manual Food Processor from Pampered Chef! No plugs and incredibly easy to use…even my boys use it. One evening I was planning dinner and wanted something different. My youngest was just sitting there watching a movie…so I, being the mom I am, said Bored? Dinner Time Experimentation!. He perked up when he hear experimentation. “Don’t all boys?”

We headed to the kitchen and I began pulling things out onto the counter…including my Manual Food Processor. I will now give you the recipe for a great side-dish.

Layered Broccoli and Potato Quiche’
2 Cups of broccoli florets
1/2 of large onion
3-4 eggs (I used 3) mixed with a touch of milk
1 cup of grated cheese
6 slices of cooked bacon ( I used a lower sodium bacon)
5 diced potatoes

I started the preparation by dicing 5 potatoes and cooking the bacon. I then began cutting the broccoli into smaller pieces to place in the Manual Food Processor with the onion. (the onion should be in about 4-5 pieces) and chop until desired blending is acquired.

I let my youngest do this while I combined the eggs and dash of milk.

I grated the cheese (sharp cheddar was the choice of the night) and placed it into a bowl with the broccoli and onion and eggs and mixed together.

I placed the potatoes in the greased 9×9 baking dish and crumbled the cooled bacon on top.

I added a touch more milk to the broccoli mixture and poured it over the bacon and potatoes.

I placed it into the microwave and cooked it for about 12 minutes…or until the potatoes were done. I grated a little more cheese on top for color and served with Chicken. It was a hit! “I think I will use this recipe in our church’s cookbook.”

I have made my fresh Spaghetti Sauce and some Salsa with this marvelous kitchen wonder along with chopping some ice cream toppings. My boys love using it for the ice cream toppings! We had fun and my youngest has been asking to use it again…”I think we will experiment some today!”

This new product could not have jumped into my shopping cart any faster. I am always on the look out for good recipes…I love using breadcrumbs and cheeses to cook with. The convenience produced by this package is a breath of fresh air. The aroma, while it was baking, filled the house and intrigued my family. The boys all came in with their noses in the air…mmm “What’s for dinner?” “Italian Parmesan Chicken” I replied! The peeks in the oven, as the brown crusted chicken baked, gave me smiles. I give this new product 2 thumbs up! It is Yummy for the Tummy!

Here is how it works:

Open the bag and mix the breadcrumbs and cheese together!

The package directions tell you to dip the chicken in water before coating the chicken!

I used three large boneless, skinless chicken breasts and cut them in half. I then flattened the chicken breast pieces before coating them. I also sprinkled some of the remaining coating mixture over the chicken before placing it in the oven. The cooking time was shorter and the boys were thrilled to have more than one piece of chicken. 3 pieces for 5 people…not bad. The chicken was tender and not dry! The raves from my family are still being heard. It was Yummy for the Tummy!

I served the chicken with a brown rice seasoned with butter and Italian Herbs and glazed carrots. Did you want that recipe too?

Glazed Carrots
Open a can of carrots and drain. Drizzle your favorite syrup over the carrots and add 2 tsp. of butter. Zap it in the microwave! TaDa! You can stop laughing now! It is really good!

I wanted to pass this on…so many people are looking for wonderful recipes but don’t have the time or energy to cook the fancy recipes for their families. This product is incredible and I look forward to trying the other available recipes! I have also included the nutritional facts for you…

Peach State says: I Would Rather Be There!

With my list of chores already laid out before me today I receive this picture of a friends vacation spot. I simply replied…Jealous! I Would Rather Be There in that place by the sea! The fresh salty air and the mist from the breaking waves as they crash against the white sand. But I grab my coffee and continue with my day! I am not finding any solace in my daily doldrums. I need to escape! Don’t get me wrong…I love being a housewife and taking care of the castle. I just need to get out past the walls of the fortress…by myself…and breathe in some fresh air. I know…I know…I got out last night when I went to church. I will get out again on Sunday morning. Maybe I should have titled this post…”My Pity Party!” I will leave in a little while and search for a useful wedding gift for my niece. “Her wedding is Saturday!” Once that retail exploration is complete I will return to the castle…and clean!

The floors of the castle are laden with traveler’s dust and collections from their journeys….(translation)… The floors are covered in the tracked in dirt from the boys and the dog along with scattered debris, like clothes and balls and water bottles and doggie toys, as they came in. The movie images of the servants sweeping the castle’s dirt floors was hilarious to me as a child. Sadly…that is the way my floors have been lately. I know they are not dirt floors…but with the constant pollen and laying down of new mulch comes yard work which leads to a constant flow of mud and grass throughout the house.

The boys have their chores (which all seem to fall on me) that are completed during the day. With their new schedules and revolving door routine the chores never get done. My youngest…well he can’t be expected to do them all and he would forget to do them anyway. Besides…what beautiful Queen would want to live in a dirty castle! This Queen will not have her King come home to a dirty castle…he would not be happy! We are not a poor kingdom…but the concept of servants only exists in dreams. The shinning of the marble and crystal must be maintained. The polishing of the silver is not an everyday activity. The Royal Gardens are still under seasonal construction and will be completed in the summer. The ever present plague of dust must be removed by hand and Pledge. “A fresh scented Pledge dusting spray not a vow!” A short solitary escape is what I desire…I Would Rather Be There!

Walking along the shore as the sun’s glow touches my skin. The sound of the waves fills my senses and drowns out all other interruptions. The warm water covers my feet as the loosened sand embraces my toes.

Snapped back to reality as I sip on my latte’! Two have already left and two prepare for their day. I will soon be alone…able to accomplish what needs to be done. Is there a nap on that list? Funny, I always want a nap but never have the time for one. I will need to keep moving this morning to avoid stiffening up like a suit of armor in the castle halls. I moved the wrong way yesterday and twisted when I should have bobbed. The pain will fade…”I hope!”…as I continue my Royal Itinerary.
I should add a visit to the Royal Baker to my list…(the local Panera Bread) for my free Mocha refreshment! This will be a pleasant addition to my retail exploration. I peeked at the bride’s list of treasures and have a idea of a wonderful gift. “I received a very large oversized bowl when I got married and use it all the time.”

My stomach growls increasingly as I wonder if the Royal Cook has any brown sugar oats. Wait…I am the Royal cook…time to fix my breakfast. Do you want to escape? Where Would You Rather Be? For the time being…this Queen will continue on the path in front of her…until the King gives her some funds from the overflowing Royal Treasury. Ah! There lies the rub! The Royal Treasury is lacking and has not been overflowing for quite a while. Oh well! Have a great day!

I have reached the “End of the Rope” and I am slipping! The knot has come undone and the rope is beginning to loosen. It is time to get a few things off my chest! So I will take the chance right now and step up onto my Soap Box and share…“Soap Box Topics!”

Late e-mails from teacher
The bells and whistles sound every night! E-mails from my youngest’s teachers reach my inbox between 10:00-12:00 midnight. I am sorry I can not follow through with my son as he is in bed.

Pocket Collections
I know what little boys are made of and the treasures they store in their pockets…I just need a garbage truck available for my youngest.

School Parking
The parking lot is so small…Come on! Can we not think first when planning the parking lot. This school has three schools that feed into it. Each of them have parking lots the size of a standard shopping center.

$$$Money$$$
Okay…to be fair…it is the lack of money. Not only does the $$$Money$$$ I have not buy what it bought a year ago but now the monthly installment has been decreased. Grocery prices and fuel prices continue to rise and the money coming in gets cut. “What’s a mom to do?” Arrrrgh!

Picky Eaters
I have been fortunate, until now, to be able to put a meal in the table and have no leftovers. If there were leftovers they were frozen and used later that week. When did Dinner Dictator move in and when can he move out?

Dinning Room Laundry Mat
Why must every article of clothing owned by my son sit in my Dinning Room? Wash and dry…take to your room and fold and put away. Worked before…will work now!

Empty Nester Tease
Quit acting like you are not living here! I plan for 5 for dinner…you don’t eat here! I plan for three for dinner…What can I eat?

Puppy Dog Eyes
I am sick and tired of the Puppy Dog Eyes that fill my 11year old’s face when he doesn’t get what others get. Your behavior is not consistent and your chores are done by others in the house…”Usually Mom!” What is this “I deserve it all” mentality? My husband and I never had to deal with this issue with our older three boys.

Pick A Box
As parents we know that each of our 4 children are unique. They have their own proverbial box they think outside of. Our youngest just keeps switching boxes and if one cannot be found in the house he will bring one home that we have never seen….much less experienced!

Wedding Invitations
Why is it that I receive a beautiful Wedding Invitation complete with directions and hotel information from friends yet…four days before a family members wedding get a phone call and no formal invitation? “Sadly…the grandparents of the bride received a similar phone call invitation!”
Better not say anything else!

Broken Toes
Just had to vent…I fell last week and thought I just jammed my big toe…Nope!
Long story short…I just moved my foot knocking my toe and the pain…
Well as daddy always said…”If you are going to make a mistake…make it a good one!”
I really need to wear more flat shoes!

Grocery Prices
I know it fell under the $$$Money$$$ topic but it really deserved to be mentioned again….”Right!” I might as well throw Gas Prices into the mix too!

Hubby Economics
He has always felt there should be plenty of money left over to play with after buying the groceries and filling up the car. I guess he forgot about the Orthodontist and the field trips and school supplies….picking up his dry cleaning and the last minute snack requests for his office. Hmmm!

I am getting a headache thinking about all these (Sarcastically picturing floating flowers and hearts to ease my reality!) normal, life altering, tedious situations. I know I am not alone and that many are suffering with devastating burdens thrust upon them daily. Please note as you read the above Soap Box Topics that I tried to keep them light and that I have left room for contemplation. The bigger picture is filled with disrespect, decaying families and economic downward spirals…”I’m just sayin’!”. Have a great day and thank you for stopping by and letting me rant! Peach State says: Boy Do I Have A Recipe for You! Part 2

I have found myself wondering what was dinner tonight! It has to be something with chicken…but not pasta or rice…potatoes? I have a wonderful recipe for potatoes but find myself in a “Shh!” lazy mood. The time it would take to slice the half bag of potatoes and making of the cream sauce just seems a bit much at this time of the day. I am leaning towards my Italian Chicken meal! Boy Do I Have A Recipe For You!

Crock Pot Italian Chicken

This is for our family of 5

5 boneless, skinless Chicken Breasts
1/2 a bottle of your favorite Italian Dressing poured over the chicken.
Cook for 2 hours on high
Add 5-6 potatoes (quartered)
Pour Italian Dressing over potatoes
Cook for 4 hours on low (until potatoes are tender)

Do not add salt
Low calorie or reduced sodium Italian Dressing work well

*Serve with a salad and favorite bread

That is an easy meal and requires very little work. My crock-pot has high (4-hour) and low (6-hour) settings. If the chicken is frozen I will let it cook longer on the high setting before adding the quartered potatoes. If the level of liquid is low add water or chicken broth before adding potatoes.

The second option is cooking the chicken alone in the crock-pot and making the potatoes separately. Boy Do I Have A Recipe For You!

Best Potatoes

This is for my family…we do love our potatoes!

8-10 thinly sliced potatoes
Lay them in a greased rectangular baking dish

Cream Sauce
2 cups of Sour Cream (a light or fat free version may be substituted)
2 Cups of favorite grated cheese (we use a combination of Sharp Cheddar and Smokey Provolone)
1/4th Cup of butter (sliced)
Chives
1/4 tsp White Pepper (optional)
2 Cups of milk (you may need more depending- the cream sauce must cover the potatoes)

Here is the key… Mix the sour cream, chives and pepper together slowly stirring in the milk. The consistency should not be thick…Pour over the potatoes! If this mixture does not cover your potatoes simple mix a little more. Once this mixture has been made sprinkle the cheese over the top and the slices of butter. Cover and Bake until potatoes are tender on 365 degrees. (Cooking in the microwave can save you a lot of time…cooking time is much shorter and you can brown the cheese in the oven if you would like to!)

Crumbled bacon and onion can be added to this recipe!

I may have to break down and make the potato dish. Just telling you about it made my mouth water. Maybe I should eat some breakfast…
