“2015…What A Year!”
Here are the stats:
Deaths…2 I lost my grandmother and my dad! Not to mention the loss of two other dear VIP friends.
Marriages…1 My 22 year old son got married in January and they had …

Births…1 We have a precious grandson! He was born a month early and is doing fine! What a delight he is!
So much has happened this past year with my little family life has been a bit of a blur!
My youngest decided to try Cross Country this school year. May I speak as a Proud Parent…he broke a record, was Rookie of the year and made Varsity! Track season is next!
I have missed our time together and can’t wait to start writing again. Of course I will have my cheerful cup of coffee (aka…6 shots of espresso) next to me.

I have not talked about my Diabetic issues for some time for obvious reasons…”There were no issues!” Everything was fine and dandy. But recently I have noticed an increase in Low Blood Sugar followed by a spike or…a normal level followed by a drastic drop after breakfast.
“What’s With All The Ups And Downs?”
Wednesday morning I go up and my BS level was pretty much normal only to have it fall suddenly to 53 an hour later. This morning…my first level was 100 and then two hours later 60…”Yes-I had breakfast!” Yesterday was not a very good day…similar levels combined with a non-stop-no-time-to-eat schedule. By 2:30 pm I was shaking and woozy! So being the health-freak-chocoholic I am I broke down and bought a Almond Joy…“What? It’s dark chocolate and that is good for you!” So the candy bar combined with the snack bowl of cereal at 6:00 am I was feeling a bit out of sorts!
Mutual Cat Loving Friend…put that finger away! Thank you! And Love You Too!
Back to the edge-of-your-seat story…I was finally on my way home when I got redirected by my oldest son and had to drive almost 10 miles up the interstate to drop him off and then back down the interstate towards home!
Did I mention he is supposedly moving out today and tomorrow?
On the final approach to the home front I got a call from a dear friend I had been playing phone-tag with all day. She had a favor to ask and well…”You know me!”…I flew under the radar and began a frantic search for a certain accompaniment track and close a party a friend held for my business, showered and changed quickly as I prepared to high-tail it back out the door within 45 minutes! I finally arrived back home at 7:15 last night and started fixing dinner. FOOD! “Slight confession…I did eat something just before singing!”
The good news is the fact that I have no real plans for today! “Can you believe it?” “Me either!”
I have a few things on the To-Do List but nothing major…”Whew!” I may want to buy a few of those Healthy Almond Joys in case I need one! I could put them in the Emergency Kit! (Insert chuckle!)

I had finally escaped the paint-fume-prison all by myself. I drove directly to the gas station…
Then over to the bank as I ordered part of dinner on the phone. Once those were completed I set out to get me nails
overhauled…done! Semi peace and quiet! For the next few minutes I felt a stress-relieving-calm with no complaining or griping and way-too-loud searching for tools. The door to the salon suddenly became a revolving door. One after another ladies filed in to get their mani-pedis. Two ladies were seated next to each other. At first glance you could tell one was a business professional with her perfectly styled hair and casual dress complete with iPad accessories. The other was, for lack of a better term, “frumpy” and more down to earth. They struck up a conversation…”I set up events and work in Interior Design!”…”I have a business related to eBay!” Then It Started…the competition to see who was more creative and professional! “Well I have a blog!” …”Really so do I!…I did not know anyone in our area blogged!” “I know…I just knew I was the only one who knew how to blog in our area!”
Imagine My “Blogging” Surprise!
It was not difficult to hear their conversation…however with each announcement of the executive abilities they each possessed, because of their blogging talents, the more their competitive tones amplified. They compared their jobs, skills, and blogs. Throughout the the mutual-adoration-fest subtle truths began making it to the surface…things like not being consistent with blogging, or the fact that one of them did not actually write the blog but that several of the people she works with contribute to a blog. I tried to get in on this “Ultimate Blogging Competition” but was unsuccessful. Then like a massive dust storm rising out of nowhere came this remark…”I have never met anyone who could successfully blog for more than a few months!”
Imagine My “Blogging” Surprise!
I was itching to get in on this competition but realized I was better than that and I did not need to prove it… After all I have written a children’s book and am still working on another project. (Note to self…find the manuscript and finish proofing the last chapter!) I did have questions about the money making side of blogging but my nails were done. I needed to grab a few things at the store and pick up the order at the restaurant before heading back to the painted canvas called home. I must admit that I did chuckle, to myself, quite a few times during this dramatic and informative conversation. The gentleman doing my nails heard me a couple of times and remarked that this was mild as conversations go. It really makes you think about what type of conversations the workers have overheard.
I wished I could have reassured this Elite Blogging Duo that they are not alone and that someone else blogs in the area…but then I would not have had as much fun listening in on the conversation. (Insert chuckle!)

Today is one of those days that life throws in just to keep you guessing. No use planning your schedule because it could change at the drop of the hat. Seriously!
Okay so my mind is moving way to fast for me today…Coffee Break!…I sat down to relax after my hubby and youngest left this morning and could only run scenarios ,of my day, in my mind. I felt like I was Coaching the Game of Life!
You go to work…run the ball
You go to school…flank right
Okay, your working too…flank left
That one is gone till sometime in the fourth quarter…in the locker room
Oldest son…defend that ball
I watch the play unfold and the quarterback runs the ball…
As long as we don’t fumble we will be fine. I have two cakes to bake…a three-layer and a two-layer
and realized this morning I am 2 eggs short. A store run is added to the day’s errands thanks to the magic of dry erase markers and dry erase board. “Tragedy averted!”
I am drawing from my previous experiences to plan my day. I may have to skip taking my youngest to TKD in order to pick up my 19 year old in the fourth quarter. He is across the state in the final stages of recruitment. Last time he was there for a test he arrived back about 5:45-6:15….that will not do tonight.
Mom has to be at a quartet practice about 6 pm with an extra Easter Practice at 6:30!
Come on guys…don’t fumble! We need to move the ball…we are almost there! I sure hope I don’t go down in history as the worst coach to ever play the game.

“Mom…there are three packages upstairs that need to be sealed up and then taken to UPS!”
“Time out!” Back to the dry erase board….leave earlier and combine the UPS store and grocery store together before heading to the doctor’s office. Wiping the sweat from my brow I remind myself to smile…oh and breathe! No time to give up now guys…push through everything thrown at us.
My head is swimming and I need to focus. Next on the list is getting ready to leave. Timing is crucial so I can get back and bake the cakes and still have time for the to cool and decorate before fixing dinner. Oh crud!. Dinner! Sorry to cut this short…I am headed back to the dry erase board. Wish me luck!…I know I am strongest on days like this… Say it with me! I can do this!

There I was…sitting in a chair across from my new PT (Physical Therapist). He began listing his goals for me as he discussed, in length, my Epic Fails!
“Wait a minute! I am not here to find out what you think is wrong with me!”
No…I did not say that out loud…but boy was the thought bouncing around my head like a high-scoring Pinball game. He said “Here is what I see:”
You limp and tend to put you weight on the right side of your body. (genius!)
You slump over a bit when sitting…possibly due to upper back pain. (wow…really)
You don’t exercise! (I had finally had it!)
“Have you read my chart?”
He gave me this look and it was at that point I began to wonder what this physical therapist really knew. “PT”- Physical Therapy or Pure Torture! Pure Torture…obviously! With a syrup-dripping sweetness I offered the information he had missed when reading my chart. “I love to walk and was walking 3-4 miles a day 4-5 days a week…then I fell!” He began flipping through the chart and finds the information. Excited he then moved to the diet portion of the discussion. “Diet…portion…hehe!”
You will need to watch you calorie intake because you are OBESE! “EXCUSE ME!”
He began telling me the ways to cut calories and how to choose my carbs and avoid sugars…or and portion control.
“Have you read my chart?”
His blank stare and quick shuffling of the pages told me, once again, that he had somehow missed that information. So I filled him in on that…I told him about being diagnosed with Diabetes and overcoming it with diet and exercise. I also told him I had been “OBESE” when I weighed over 300 pounds but lost almost 145 pounds when I cut my carbs and sugars. The color began to drain from his face. He re-grouped and said…”I assume you have cut out Alcohol and Caffeine?” With a raised eyebrow I smiled and sweetly responded…”Nope!” “I don’t drink alcohol that often and as for caffeine…well…I probably drink more coffee in a year than the population of a small country.” I knew what was coming next as his “Cheshire Cat grin” slowly crept onto his face. I beat him to the punch. “I was told by several of my doctors year ago to continue with my caffeine due to migraines and asthma. Caffeine is readily the best method due to moving the blood at a faster rate and opening the blood vessels. The main problem with both migraines and asthma is the contraction of the blood vessels.” He nodded in agreement and said he wanted to perform a strength test. After that he seem surprised and said I was stronger than most 30 year old women. I then laid down on a table and he asked me to breathe in and out. I did! He asked for me to take a deep breath…go ahead…”I did!” The problem was he was waiting for my shoulders to move…”How do you breath?”
“Have You Read My Chart?”
“I am a singer…trained…long-time singer and learned a long time ago to breathe using my diaphragm.” As I laid there I could hear the flipping of pages. I sat up and smiled…”I am here to try and find relief from this pain so I can return to walking and loose this weight I have gained back. I am not your average person and have overcome many obstacles. Can you help me?”
“How about we try and find out why you started falling and work on balance and re-strengthening of your weaker muscle groups?” We shook hands and set up a plan.
I start next week…we will see how well this goes! As for today…more pain management injections and a visit with the chiropractor. Goody…Goody! I am off to start my day and what a day it is. Wish me luck!

We have all felt the effect of rising grocery prices and know the hardship caused by necessary cutbacks. The “little extras” we had on hand have disappeared along with items of monetary frivolity. I have gotten used to saying “We don’t have that!….and We haven’t had that in quite a while!” to the curious starving mouths in my home. “WHY?”
It’s Called Economic Fasting!
I made myself a bowl of quick oats and realized I had used the last of my hoarded Splenda Brown Sugar for Thanksgiving. “Yes I use Splenda…I have been using it since I was diagnosed with Diabetes and even after losing all my weight and having a normal A1C level.”
Needless to say my oatmeal was a bit tasteless and was not as comforting and satisfying as I had hoped. I ate it anyway! My convenient little snack bars and crackers disappeared almost a year and a half ago. You would think I would not have a problem dieting…wrong! I can no longer buy the low-calorie-carbohydrate-deficient-sugar-regulated-between-meal supplements. If I snack…well it is not pretty! “Truth be told…I walk around with a growling stomach.” The healthier food I used to purchase and prepare have become unaffordable and I have had to resort to creative and less expensive substitutes. I still watch my sugar intake and watch my carbs but, it is difficult to watch those blasted portions!
Items on my Economic Fasting list:
Special K ( cereal, bars, etc.)
Splenda (white and brown)
Lean cuts of meat
Sugar free syrup ( This is for waffles and pancakes…I am now out of this!)
Low fat or fat free yogurts
Low fat and sugar free desserts
Fresh fruits and veggies (they cost more than the canned substitutes)
Unlimited supply of lettuce and specialty dressings
Snacks for the family ( hubby and boys)
Individual bags of chips for my youngest’s school lunches ( large cheap bag of plain chips in a Tupperware type of container)
Individual cookies packs for his lunches ( old-fashioned pack your own in a Baggie)
Cereal bars and pop tarts for the boys to grab in a hurry
Yogurts for the boys
Sugar free Hot Chocolate ( I added dark chocolate chips and little non-fat milk to it…)
Low calorie sliced bread
“Okay…I am getting hungry and my tummy is rumbling.”
I know there is more and I know I am not alone in this struggle. We all feel the pinch when it comes to the trip to the grocery store. My hubby, at least, is beginning to understand the reason I am running out of grocery money so quickly. How you may ask? I let him cook dinner one night and he went to the store with one of the boys to pick up the items he needed. “It didn’t cost this much last time I cooked this meal!” he said.
So…we will march on! Doing what we have to when it comes to feeding the family. Sacrifices will be made and complaints will be heard. “I double-dog-dare the boys to complain!”

My, just turned 22 year old, son has struggled with his weight for a while now. When I began to lose my weight he was uninspired. I knew that one day he would decide, for himself, to lose the weight. That day is here!. He came home about two weeks ago and told us he was going back to TKD. “We were close to this instructor and he had moved his business back into the area.” He talked with the instructor and his wife, a nutritionist, and decided to lose the weight. “We will do it together.” his instructor said. He came home on Saturday with a plan and I decided to diet with him. Then he showed me something on his phone! The New Diet! There’s An App For That!
My son was all excited as he showed this app to me…It is call My Fitness Pal.
It records and tracks all your weight loss and caloric intake along with carbs and sugars and allows you to motivate others as they motivate you.
You send a friend request and you can send encouragement or get-back-in-line messages to each other. This really is a plus for my “Techno-geek” son.
So…I started yesterday…and plugged in the food I ate and the abundance of water. I had added two of my friends, one of which was starting her diet back up, in hope of some accountability. “Okay…I needed to get my butt kicked at times!” There is a tab for exercises that gives you a Pre-set list of different degrees of exercises and how many calories are burned. You click on the correct Pre-set and the app calculates everything…even adjusting the amount of calories you need to intake for the day. “I must admit…I started with 1000 calories per day and have received a message each day stating that I did not reach my goal…not enough calories.” :-(. Should I be bummed or just lower the calories I eat a day? That is the question!
I have not weighed this morning because the scales are in my son’s room…I need to figure out the difference in weight between his scales and mine so I can weigh first thing every morning. So far, as of last night, I have lost about 2 pounds since Sunday and almost 5 since getting back from vacation.
There is a discrepancy between the two scales and my son’s scale is a much better friend to me than my scales. “A girl must always choose her friends wisely!” A list of foods came home last night with my son…Needless to say there were some things on this list that do not appeal to my palate. Picky eaters get to eat the same thing over and over. I was surprised to see toast on the list but, there was no mention of butter or jam on the toast. Hmmm?
I will finish my yummy Venti-skinny-vanilla-latte’ and plan the meals for the rest of the week. I will discuss these meals with the nutritionist tonight while my youngest is in TKD class. I want to get back into a certain pair of jeans and a certain dress…but if I can stick with this and start walking, consistently, I would have to buy some new clothes that are smaller!

There is nothing wrong with a little experimentation in cooking…it leads to great recipes and opens the floods gates to creativity. A little bit of this and a dash of that, stir in a pinch or two of these spices and “BAM!” a new recipe is formed. The above pictured item is one of my new favorite items for my kitchen. It is a Manual Food Processor from Pampered Chef! No plugs and incredibly easy to use…even my boys use it. One evening I was planning dinner and wanted something different. My youngest was just sitting there watching a movie…so I, being the mom I am, said Bored? Dinner Time Experimentation!. He perked up when he hear experimentation. “Don’t all boys?”
We headed to the kitchen and I began pulling things out onto the counter…including my Manual Food Processor. I will now give you the recipe for a great side-dish.
Layered Broccoli and Potato Quiche’
2 Cups of broccoli florets
1/2 of large onion
3-4 eggs (I used 3) mixed with a touch of milk
1 cup of grated cheese
6 slices of cooked bacon ( I used a lower sodium bacon)
5 diced potatoes
I started the preparation by dicing 5 potatoes and cooking the bacon. I then began cutting the broccoli into smaller pieces to place in the Manual Food Processor with the onion. (the onion should be in about 4-5 pieces) and chop until desired blending is acquired.
I placed it into the microwave and cooked it for about 12 minutes…or until the potatoes were done. I grated a little more cheese on top for color and served with Chicken. It was a hit! “I think I will use this recipe in our church’s cookbook.”
I have made my fresh Spaghetti Sauce and some Salsa with this marvelous kitchen wonder along with chopping some ice cream toppings. My boys love using it for the ice cream toppings! We had fun and my youngest has been asking to use it again…”I think we will experiment some today!”

Coffee drinkers unite! Coffee is just like Lays Potato Chips…You can never drink just one! Waking up, taking a few moments to yourself, spending time with friends, and/or still not awake are all quality reasons for that second cup of coffee. Mmm…My Second Cup of Coffee!
I sit here, this quiet Saturday morning, and steadily sip on my oversized 20oz cup filled with, yes…you guessed it, espresso! A steaming rich collection of vanilla and the tiniest bit of non-fat milk mixed with bold espresso. I know what you may be thinking…”How many shots of espresso does she drink?” I confess I nap, sometimes, and sleep fairly well at night. I was born this way…to drink coffee that is. Coffee is in my blood! “That is a good blog title!”
During the summer months, or at least the days there is no school, I enjoy sitting with my hubby in his office. I fix his coffee and breakfast and wake his royal highness out of his sweet slumber. We converge on the office for our mutual wake up session. A little light conversation and laughter together to start the day. All the while with our coffee, the ever vigilant companion. This morning we watched three Rascal Flatts videos instead of the news. “What a wonderful change!”
It is a well know fact…at least in my extended family…that major topics of conversation and questions regarding schedules and money are not brought up until the Second Cup! We take our time and enjoy the small things in life…quietly! “Sorry…for a moment I thought I was on Fantasy Island!” The word “quietly” is a real stinker.
Hubby leaves for his day at work and I settle back and give thought to my day. There are a few things on the agenda for today but nothing major. The boys, the 21 and 19 year olds, will have their jobs and I will be here with the 11 year old. “He seems content with his job…annoying and to question everything!” It is still and quiet in the house right now…except for the soothing snores from my Precious Princess. I am finished with this cup and will refill shortly…
I would like to finish my book today but will definitely require My Second Cup of Coffee! Maybe I will just stretch out for a few minutes before the Carousel of Life begins it’s daily up and down, spinning motion.

With my coffee in hand I began my morning of habitual and routine actions. I checked my Facebook and posted the numerous replies…bounced over to Swagbucks and did a search for my morning swag…then the all important checking of my Blog Stats. The notifications tab was bright and starred meaning something good waited for me. My heart was near racing when I opened the tab and found a nomination for the “Sunshine Award“. With a thick cloud cover outside I still had A Little Sunshine to Start My Day!

As for me I am off to try and finish the decorating of my classroom for Vacation Bible School this next week. I have the beautiful Victoria Falls as one of the main scenes and will be recreating The Matterhorn Sunday after church. There will be a seating arrangement resembling an airplane facing a cockpit where another teacher will lead as the pilot… “I found out yesterday he was in the Air Force!” I will show you the pics after I finish…if the decorations are any good!
