Peach State says: Is Anyone With Me In The Giant Void?

20140123-131430.jpgI am sitting here watching the movie that inspired my “blogging endeavor”. 

Julie & Julia…one of my favorite movies about two of my favorite things.  Cooking and friends.

As Amy Adams character begins her blog she feels a emptiness that the words that pour out her into her blog fall into the undiscovered-vast-expanse of the deepening internet reality.  “I have felt like that…have you?”  

The pure love of food and sharing it with those closest to you…what would you serve?

Julie is up to the Lobster Thermadore ( forgive the spelling if incorrect!)  “Lobster Killer!”

I laughed so hard when the lid rises, as if the lobsters are working together to escape the “Lobster Killer”, and Julie goes running into the other room!  “Between you and me…I have no room to talk…I have never cooked a whole lobster!”

I remember going to Seattle, with my hubby, to celebrate our anniversary and having this incredible entree called “Steak Oscar”. Cheese, artichokes and crab mixed into a lovely tasty topping for my filet.  Melt in your mouth good!  Some might say better than ________!

“You can put whatever you would like to put in the blank…hehe!”

I had to attempt the delectable mixture at home.  “Success!”.  Reality does tend to enter our existence on a daily basis.  Meltdowns occur, recipes burn, dishes explode all over the kitchen.  “15 second rule!”  Julia said to never apologize if it doesn’t look right…it’s always the way it’s supposed to be!  Silly me…I still apologize!  Perhaps I am more The Pioneer Woman instead of  Julia Childs.  

I guess it is a good thing my hubby likes my creativity!  What is your favorite dish?

You Want Me To Do What!?

I know I am not alone!  I find great relief in the fact that somewhere, right now, there is a wife being asked to do something they have never had to do before!  They’re question is the same…

Let me back up to last night…My sweet and loving hubby called, as he does not very night on his way home, with an excitement in his voice.   “I have some fresh tomatoes for you and a zucchini!”  I don’t cook with zucchini…never have!  My hubby asked me to make him a loaf of Zucchini Bread…and one for his friend.  I thought to myself…

“😱😳😰😷😬💬⚗YUCKY!!”

I googled for a recipe and made it…put the three pans in the oven and sent this picture to my hubby.   He was soooo excited!  Smelled half way decent while it cooked and I may have to try a teeny-tiny-barely visible-microscopic bite.  I will let you know!

The menu is prepared and casseroles prepared. Only one question this year…”Mom, how many pumpkin pies are you making?” So back to the store for more ingredients so my military son can have his pumpkin pie!

The continuous deluge of rainy weather have finally ceased…leaving us with a new battle of sorts!

Flies, Flies, Flies…all over the place…Did I say Flies?

Have no fear…“Have Fly Swatter Will Travel!”

My family has been smoking/ cooking out, since about Father’s Day, and the invading-swarming-trash-heaps have really interrupted our little piece of the world. The dive-bombing routines convince me that these invaders are also severely ADHD! It seems there is a correlation between “Life-span of a fly” and “ADHD”…you see they exist for such a short period of time they must find a way to see and do everything. After all it is a big world…especially to a fly! You would think that with all those eyes they could take in more of their surroundings…I would just get sick and throw up.

I have to chuckle at the amount of people who have armed themselves with the flimsy-fly-trap-device. They should be made available to visitors so they can assist homeowners in their extermination of the buzzing-pestilence. I remember my mother always had several hanging by the doors for just that reason. “I guess you could use them as a fan of sorts.”

I need to apologize for the grotesque topic…you can relax now and go back to drinking you “Heavenly Brew”. “Ahh…that is so much better!”

Peach State says: No-Bake Recipe

This inspired recipe came from a Publix advertisement. I was checking the sales for the week and saw this delicious cake…and boy-oh-boy (Danny) it be great with a cup of my “Heavenly Brew”.
“OOO…that looks good and the price is right! I think I will pick one up for the holidays!”

I mentioned this story, in passing, during the Fourth Of July holiday. When I went to purchase this “tower of yummy-ness” the bakery personnel informed me it was made by order. I was slightly miffed when to my wonderful good-fortune the other baker preceded to explain the ingredients in the cake.

Yellow Cake
Publix Apple Butter
Powdered Sugar

“That’s it!” I graciously turned down the offer to order one of my own…and turned around a grabbed a Pound Cake. So are you sitting down? Here is the “No-Bake Recipe”:

Knowing I had Apple Butter already at the house I grabbed the freshly made Pound Cake (which was on sale for $2.99) along with other items needed for our cookout.
Once home:

I sliced the cake into four layers
I spread the Apple Butter between each layer
Once complete I used a Cinnamon-Sugar Blend ( in a grinder) on the top.
I placed it in the refrigerator.

This is the cake I sliced and took with me to the holiday gathering with the Peas in a Pod…it was a HIT!

The next time I make this cake I will use more Apple Butter! I was thrilled, however, to hear many yummy cheers about this cake. It is a very refreshing recipe and like you may have noticed…EASY! I may try the powdered sugar on the next one…just for effect!

I also made a “Boston Creme Cake” for my son’s birthday that same week…
I kinda cheated my way through this recipe. I did make a Butter Cake for this one but then used
pre-made vanilla pudding and spread it between the two layers. (I only used two of the little pudding cups so that the cake would not slide!) I then covered and placed the cake in the fridge. Just before serving I heated some store-bought-chocolate-icing and poured it over the top…“Ta-Da!”

Anyone thinking about a rich-yummy-tidbit-of-chocolate with a cup of coffee? Have I got something to share with you! I have a few recipes, that I recently found, you will love…and that are relatively easy. With the 4th of July coming up you may need a few tasty ideas for those parties and Bar-B-Ques! Here we go…

“Party Time Recipes”

Let’s start with the “Chunky Chocolate Coffee Cups:

(Before going any further…I made a batch without coffee and they were just as tasty!)

Preheat oven to 375F
Coat(spray) 36 mini muffin cups with cooking spray…after placing them in a mini muffin tin…

In a large bowl 1 tsp instant espresso/coffee in 1 Tbs of water. (I used 1Tbs of a shot of espresso)
Add 1 package of Betty Crocker double chocolate chunk cookie mix
1egg
3 Tbs of oil
Stir until a soft dough forms

Place 1″ balls into coated mini muffin cups and bake 8-9 minutes or until set.
Make an invention on the top of each and let cool.

Now you can serve these delectable treats as they come out of the oven or continue with the next steps…

Combine 1 can of vanilla frosting
2 Tbs caramel liqueur of cold coffee
Once blended add 1/2 cup of marshmallow creme into the icing mixture.

Spoon frosting onto each little cup of deliciousness and store in the fridge. Before serving drizzle caramel syrup over the cups with a fork. Makes 36 servings

The next one was to die-for! It is great with vegies or crackers!

My Favorite Onion Dip:
This one may sound complicated but it is far from it…just a few steps to follow.

2 Tbs EVOO ( translation..Extra Virgin Olive Oil)
2 cups of chopped green onion
1 medium minced red onion
1 tsp Thyme
1 8 ounce package of cream cheese ( I used a fat-free version)
1 cup plain 2% Greek yogurt ( less is more and I chose a fat-free version)

Heat the EVOO in a skillet and add the green onions and Thyme
Lower heat and stir until the onions begin to brown
Place the green onions and Thyme on a paper towel and dab the excess oil

…you can mince the red onion while cooking the green onion and Thyme…

Meanwhile…combine the creme cheese and yogurt and red onion
Once combined add the cooled green onion and Thyme and stir.

It can be made up to 2 days ahead of time!

Both of these recipes were recently used and inhaled enjoyed by all. You should really try them…I know I will be preparing these for our celebration coming up!

Oh Joy…Oh Thrill…my NEW Microwave!. Let the fun begin!

Take heed brownie and muffin mixes! No use hiding refrigerator biscuits! I have a convection oven…well I have the convection oven feature on my NEW microwave.

It’s Not Just For Zapping Coffee…can you believe it? (insert chuckle here…) You and I both know I used my microwave for many functions, all the same, I cannot wait to become a Mad Scientist again. And without all the sweltering-radiating-heat-from-the-almost-out-of-date oven I can roast and bake to my little heart’s content. “Yea Me!” (Doing the dance of joy….okay I stopped!).

Now all I need to do is locate the book…you know the one…:

Fantastic Recipes For Your Convection Oven

If it is not available I will just look for a copy of:

“Convection Cooking for Dummies”

Now is not the time to be a chicken and not experiment. “OOO…Chicken would be good for dinner!….Roasted Chicken!” Wait a minute… I have thought of one major drawback! How will I be able to know when my brownies are done…”you know!”…oooey-gooey-rich-and….WONDERUL!. This could be a BIG problem!

I am pleading with all Convection Oven Cooks…send advice, recipes, tricks of the trade and shortcuts. All will be appreciated!

Well…Precious Princess is having a spa day…(translation: the groomer is here!) and not a moment to soon. Precious Princess will be racing up the stairs in a moment while the groomer cleans up after the bath portion of the session. I will then let her run freely, in her curl free cut, before herding her out the door.

Peach State says: Death By Chocolate…Recipe

Well today is the day! I finally bought the ingredients and set aside time to bake this yummy sounding-chocolate explosion.

“Death By Chocolate…Recipe!”
1-5oz box of Cook and Serve Chocolate Pudding
1-Chocolate Cake Mix
2 cups of chocolate chips
2 1/3 cup of milk

Cook the pudding using all of the milk
Dump the cake mix into the pudding
Spread the pudding-cake mixture into the 9×13 pan
Spread the chocolate chips evenly over the top
Bake in a Pre-heated 350 degree over for 40-45 minutes.

First of all: I may have made a minor oops…I picked up instant pudding instead of you-cook-it pudding. I adjusted the preparation and followed the directions on the pudding box…using a little less than 3 cups of milk. As for the recipe I altered the ingredients and used a sugar free pudding…a sugar free cake mix, non-fat milk…and the whole bag of semi-sweet chocolate chips. Here is the original recipe I used!

After preparing the 9×13 pan I mixed up the pudding:

I then mixed in the dry cake mix:

It is very thick! I placed it evenly into my prepared 9×13 pan and topped it with the chocolate chips

It has 20 more minutes to cook and already the chocolaty scent is wafting into the living room. I will show you what it looks like and let you know how it tastes. After all…taste definitely matters. If it is half as good as it smells it will be delicious. This is a good thing because I planned on taking this dessert to a friend who just got out the hospital.

“Our mutual-cat-loving-friend and I are providing the meal tonight.”

It tastes…wow…the pudding and the cake mix are merged and provide a scrumptious gooey-cake texture. I must confess. This will be added to my family’s favorites list! “I know it is on mine!”

Peach State says: Saturday Fun…

Bummed…there is no snow on the ground. It’s March so we should have snow! “Just a little would have nice!” We we have all month…Keep Calm and do the Snoopy Dance!
Okay…So instead of playing outside in the snow we will stay warm and dry inside out of the nose-blowing-sniffle-creating dreary day. What to do to have some Saturday Fun…!

I started the chili beans soaking and cooking this morning. HOMEMADE CHILI…Yummy!
With that done I can do a couple of errands out and about then settle in with movies for the rest of the days. “What? I can fold clothes and sort the ridiculous stack of leftover mail while watching a movie.” I have already gone over my music for tomorrow and will probably go over it again. Whatever I do will be relaxing and not strenuous. (Doctor’s and hubby’s orders)

Peach State says: Keeping Up with My Day!

These weeks just fly by…except for Monday and today is going to drag!
It is going to take a great deal of creativity and skill to strategically manipulate the varied schedules of my family. “Oh Boy, Oh Boy, Danny I will simply wipe my brow and continue Keeping Up With My Day!

I have decided to carry an abacus to keep a running tally of the different routine chores, routine outings, extra-nonscheduled-have to attends, the run me here and theres…not to mention the balancing of each of my 4 son’s different schedules. The blending of six unique and complex schedules can be Bear…which is why I am Mama Bear…and don’t make me mad! Making me mad will cause me to delete your scheduled events. “That will teach them!”

I sat down with my #2 son a little while ago in hopes our schedules would easily merge. He has work at 11-3 then off to the gym by 4. I have my youngest coming home at 4 and he will eat dinner before heading to TKD Awards Night (hoping for the next belt rank). Sometime between 6:15 and 6:20 I will meet up with #2 son and drop off those with me and head to church for a much needed extra practice for our Easter music. About 7:00 my hubby will call and tell me he is on his way home…but we will not be able to chat on his drive home like usual…I will be at practice. “I did mention the practice to him this morning as he rushed out the door to his 7:30am meeting.” ( A special thanks to my hubby’s boss for setting this special early meeting. We had to get up an hour earlier today!)

Somewhere between recruiters and doctors…school and TKD…work and normal everyday chores…I will Keep Up With My Day! “I will sure try my best!” I should fill up and be prepared for the rest of the day…
