Peach State says: Just A Thought!

With this in mind…I have to say my typical blog for this morning will be delayed. My sweet and loving hubby scheduled a day of home improvements! You know the kind of home improvements when 2-3 workmen invade your home and put a damper on any plans you may have had. These same workmen will arrive sometime in the given window and stay for an undisclosed amount of time. I was asked to sing at a banquet this evening but had to back out because of this scheduling travesty…Okay…maybe I am going a little over board. “Just A Thought!” I should put my best foot forward and enjoy the day I have been given. The good news is the fact that several household chores are complete in preparation for the workmen…

Hmmm…What to do now? All that is left is to irritate my children! Hehe! This will be fun!

Peach State says: Summer Kitchen Part 2

I just took it out of the oven!!! The aroma spilled out into the kitchen as I moved the Summer crop filled pie out of my oven. I can’t wait to share this amazing recipe with you! So as promised…Here it is…A taste from my Summer Kitchen Part 2.

Let’s call it a Cheesy Tomato Pie:
3 large tomatoes…peeled, seeded, and sliced
1tsp salt (I used Light Salt)
1 refrigerator pie shell
4 slices of bacon
3 thinly sliced onions
1 cup of sharp cheddar cheese (lower fat cheese can be used)
1 cup of mayonnaise (light mayo can be used)
1/4 tsp pepper
1/3 cup grated Parmesan cheese (cheese of choice)
2 Tbsp breadcrumbs (Ritz Crackers)

Pre-Heat oven to 350 degrees…

Place seeded tomato slices on paper towels and pat moisture off the slices…use half the salt and sprinkle on top of the slices to draw out moisture for about 30 minutes.


Cook your four slices of bacon…(I used Lower Sodium Precooked Bacon that I zapped in the microwave)


Place the pie crust in the deep dish pie pan and bake until lightly brown.
While it is baking slice the onions and sauté in bacon drippings or favorite oil. (I used a Light Virgin Olive Oil)


Place the sautéed onions in the pie crust

Place the tomato slices on top of the onion

Mix the 1 cup of cheese and 1cup of mayonnaise together with the remaining salt and the pepper then spread over the tomato.


I used a light mayonnaise with a 2% milk cheese.



Combine the breadcrumbs and Parmesan cheese and sprinkle over the top of the pie.
( I used 5 Reduced Fat Ritz Crackers and Mozzarella mixed with Sharp Cheddar Cheese and tossed in the crumbled bacon.



Bake till brown.

I cut a slice to show you the results…and well I only took one bite!

I sent pictures to my friend who shared the recipe with me yesterday…she mentioned she would have to come by and taste mine…and how she was going to use my altered recipe. You will want to try this recipe…It is wonderful!

This is a Tomato and Goat Cheese Tart similar to the one I will prepare later today. My concept started with a pic and a friend’s recipe. I got the recipe from her yesterday and immediately began tweaking it. My friend made her Tomato Tart yesterday and said she would share the ins and outs with me this morning. I will write again later and show you, step by step, how to have a taste of summer from a Summer Kitchen.

You will not have to wait long…I plan on starting this delicious recipe before lunch. (translation: after the two older boys go to work!) I will also be making another Peach Cobbler today! Mmm! I do love the summer fruits and vegis! See You Then and Wish me Luck!

I am glad to report there is no sign of tears here…I love this song but it is such a downer!
It is just Monday and the next thing you know it will be Tuesday. Most people are lucky enough to have the entire weekend off…not in this household. I submit, for those who struggle with Mondays, remain hydrated. Drink plenty of coffee….”Okay! Okay! Those of us who understand and cope with Mondays can drink all the coffee we want too!

Peach State says: The Early Morning View

There is a hazy wet blanket laid over my house this morning. The droplets will slowly begin their trek down the screen as evaporation, from the traditional southern summer sun, will take care of the rest. This dampness alters my perception as I try to check for early morning walkers before letting my unleashed beast (my precious princess) go out for her first duties of the day. I know it will be a muggy, humid day and sigh at The Early Morning View!

The heaviness in the air whacks me in the face as I slowly open the door for the semi-panicked shadow. She races out the door before I have time to sound the all clear. Relieved she visits every leaf hanging low under the weight of the morning dew. She makes her way back to the stairs and shakes then begins her slow sloth-like climb. [She is an old girl of 13 and the five front steps are better than the 16 steps off the back deck! ;)]

My precious princess retrieves her treat and continues on her morning routine. Into the dinning room she goes to the lifted blind and peers out the window. She stands and snorts and tried to look between the blinds…she could see nothing. Giving up she returned to the kitchen where I was preparing breakfast for hubby and the oversized cups of espresso.

After a short time upstairs with hubby I head back to my haven to write. I glance toward the windows in my family room and see the moisture is beginning to vacate the small squares of the screen.

I will need to dress cool today and hope that everywhere I find myself there is moving air. I don’t need air conditioning…just moving air! Otherwise I am afraid my face will resemble the screens as the non-dew moisture rolls from my forehead. [Note to self…do not wear liquid foundation for the outing this afternoon!] “That would not be a pretty sight!”

I am almost finished with my first Venti skinny vanilla latte’ of the day and I have plenty to do on my list of scheduled chores. I only hope the sticky moisture disappears quickly…I do love looking out the window as the world passes by. “Well maybe not the entire world…but my little corner!” Take a moment a glance at your window…enjoy…The Early Morning View! There was a day when, as a child, I wanted to know why there was such a big hype about coffee. My parents called it theirs…”Could you grab my coffee?…Could you warm up my coffee?” What was so special? So I asked and was told it was for grown-ups. “But why?” I asked and each time the response was the same…”Because I said so! This Is Not For You!”

I am so glad I grew up…because I love my coffee! I repeat the same requests, when the boys are around, for a warm up or re-zap of my coffee. I smile, inside, as I channel my elders in this you-do-it-I-don’t-want-to-get-up mentality.

The other day, while packing for our trip, my youngest was sent downstairs for some baggies. (zip-lock baggies are a must when traveling.). He took a little while to return and when he came waltzing in to my room he carried with him a fragrance familiar to my sensitive nasal receptors. “What took so long Bud?” He said he could not find the baggies. “But you found them…thank you!”. The scent was lingering…and for a split second I thought I may have spilled some coffee on my shirt. “Hey Bud…come here a second.”. He slowly turned with that I-did-not-do-it look on his face. “What did you get into downstairs?” “Nothing!”. I stepped closer and the distinct aroma triggered my senses. “I smell coffee! Did you drink some coffee?” He swore up and down that no coffee passed over his lips and that he knew he was not supposed to drink it. “Do you know why you are not supposed to drink coffee?” The hamsters were furiously running on the wheel in his head. He struggled to find a suitable response. “Uh…I don’t know!” Oops! Epic Fail!

Sooo…he could not tell me why he shouldn’t drink coffee and as a loving mother I wanted to help him understand…clearly! I went downstairs, as he followed, and poured a cup of coffee and handed the cup to him. He refused it the first time but with further urging he began the steady sipping of the coffee. I began to tell him how parents try and help their children by watching what they eat and drink to keep them safe. There are just certain things that your little body cannot tolerate in any dose much less large doses. Things like candy, cokes, pastries, and caffeine. Now add in the fact that you are ADHD. “The coffee was beginning to turn his stomach and the faces he was making were filled with struggle.” I began my “Lecture #236” What Sugar and Caffeine do in the body.

When I finished he asked if he could stop drinking and I said yes. I told him that he would have to work very hard to control himself. It was at this point he turned around with a quizzical look, only a child can have, and asked me a final question. “I never knew all of that…I just wanted to see what it tasted like because you said no!” I chuckled and replied ” I never said no…I said “Because I said so!” because you should realize that there are just certain things I know that your don’t.”

Long story short…he had drank the rest of my hubby’s latte’ before returning upstairs. The over-active mind and body of this 11 year old was launched into overdrive with this stimulant coursing through his little body. He did work very hard to control himself and for the most part was well behaved the entire day. The good news is that he learned a lesson. He said he was sorry and that it would never happen again!”

Lesson Learned!

He doesn’t like having the shakes and the coffee made him really shake. He was hesitant to even re-fill my cup. At least I know he won’t be drinking coffee again for a while. As for me…it is Coffee Time!

Take out the word “Hammer” and put in the word “Coffee”! Sadly the tune is stuck in my head….doot..doot..doot..doot. Have a great day!

Peach State says: A Little Bit of Everything

There is nothing quite like the company of good friends to take you from the routine-run-of-the-mill-day-to-day activities and transport you to a place of uncontrolled silliness. “Well not uncontrolled… We were practicing our special music and polishing the harmonic blends…” This mixture of a fast-paced-giggle-fest and singing thrills me to the core. “I am at home!” The only thing that could have made it any better would have been the presence of coffee in my hand…but alas…time constraints prohibited the preparation of my Heavenly Brew! There were many different topics which had ties to family, children, life, music, church….well the list goes on. Last night was a renewal of sorts and a loving warmth spread to A Little Bit of Everything important to me.

Please do not think I want to be the center of attention. I was merely the social butterfly fluttering about the different personalities. My friends at church seem to fit neatly in the different areas of my life. Many overlap and we use these connections to build each other up when life interrupts.

Well there was more…but maybe you get the idea. The special thing about my friends is that we wear so many hats and have the ability to relate and help each other in every facet of our intricate existence. “Okay, those of you that may see yourself, in any way, just relax…and remember the laughter shared and the pats on the back…and let it ease the struggles you may come across today.” Oh…except for the one who went to whack me in the head with a microphone! You know who you are…LOL!

My weight loss accountability friend came in last night and grilled me over my caloric intake. Mmm…grilled! “Sorry I grabbed an apple…my stomach is beginning to growl.” I was able to say I have lost weight…over a pound a day. “As of this morning I have lost four pounds since starting this diet on Monday.”

One of my BFFs (the one married to my BFF minister of music) was home with sickies. I so missed her but what can I say…”BTDT”

I have told you before about the Peas in a Pod group of friends …well most were present and accounted for last night. There are many topics of conversation weaving in and out, when this group is together, and just about every topic on the above list was discussed. This is the group that has given me the nickname “Trouble” which is not a very fitting name…if I do say so myself. I have never done anything to merit this personality stamp…except for that one time and they don’t know about that. Hehe! The shoulders of comfort and strength, we share in this group, are held up and supported by the love and joy as our friendship grows. Even when we do not share our deepest pain…we know and understand and are there for each other.

I need coffee…especially when talking about this group!

A friendly spunky spirit came back to choir last night. She works with the Children’s Ministry and we worked together during Vacation Bible School. We have many common life factors starting with my home town. Her mom worked with my husband…her family went to church where my brother was Minister of Music…all in my hometown and now we have connected. She always shares her warmth in her smile and even her frown. “Her frown is not on her face long…she is just tooo….spunky and it is contagious. We talk about her love of photography and her traveling hubby, who is back in town, and her recent bout with sick children. She wants to get together and do lunch…as long as salads are served I will be fine. Mmmm!…salads.

Don’t laugh…I am really trying to be good and watch what I eat. Everything is listed and counted on that My Fitness Pal app and I need to maintain the levels. Those unseen calories add up so quickly.

The creaking floors are sounding above my head as the rest of the family begin to start their day. Work lies ahead of them along with a tune-up for the 22 year old’s truck and on-the-job-training for the 19 year old. TKD for the youngest later this afternoon and …


Tonight for dinner we will have something….good! At least my hubby works until 8 and will get home about 9 tonight. I have a few hours to plan dinner. I do need to do a little cleaning so maybe I will do that before leaving for lunch. You know the dusting and vacuuming and laundry…giggle, giggle…my last load is in the washer already. I have been busy this morning while writing this.

Well the entire family is up and the day is in full swing. I have multi-tasked too much this morning and I need to close. I cannot write with my youngest in the room. I will move on to another activity…maybe the dusting…and try to fit everything in today. I hope you can find time to do A Little Bit of Everything in you day.
