Peach State says: Summer Kitchen

This is a Tomato and Goat Cheese Tart similar to the one I will prepare later today. My concept started with a pic and a friend’s recipe. I got the recipe from her yesterday and immediately began tweaking it. My friend made her Tomato Tart yesterday and said she would share the ins and outs with me this morning. I will write again later and show you, step by step, how to have a taste of summer from a Summer Kitchen.

You will not have to wait long…I plan on starting this delicious recipe before lunch. (translation: after the two older boys go to work!) I will also be making another Peach Cobbler today! Mmm! I do love the summer fruits and vegis! See You Then and Wish me Luck!

We are first cousins who live farther apart from each other than we would like. We thought this blog would give us a chance to visit with each other as well as maybe share a few insights about life. We are both middle aged and until recently both of us had kids the same age (nearly grown). But then the Peach State cuz adopted a son, so she has four now. Heart of Dixie cuz has two daughters. We have a couple of things which are prominently in common (although I'm sure there are actually more): We vacation at our Mema's beach house in Panama City Beach, Florida - until recently, we did so with all of our kids. We both sing - although Heart of Dixie cuz is not currently singing anywhere right now. We both write. We are both Christians, although Peach State cuz is Baptist, and Heart of Dixie is currently floating about between the Anglican church, the Methodist church, and the Episcopalian church. Long story.

  1. Sorry…late start this morning, but a productive one. The pie I made was pretty good, but I will be tweaking it! First, the tomatoes need way more than thirty minutes to dry out enough. My pie was a little soggy. Secondly, the tomatoes had a strong acid taste for me. Next time, I will be neutralizing the acid with a little sugar. And one other thing…the ratio of onions to tomatoes were off for me. Next time, I will use only two onions. However, all in all, I enjoyed the combination of flavors. Hubby liked it too! Can’t wait to hear how yours turns out!
