Gone are the days of consistency in schedules. Gone are the days doing homework at the kitchen table and the endless questions from a 5th Grader fishing for the easy solution. It is the last week of school in our county and the anticipation, mixed with fevered chaos, has spread from the youngest to the oldest of students. Countdowns are on every calendar…4 More Days!
Last week, while working with my teacher friend in her classroom, I was witness to the changing of the numbers. A school staff member walked into a lively cafeteria and stood in front of the over-sized countdown on the wall. Taking down the old number…10… and replacing it with the first single digit…9 day left. The whispers began to change quickly as he stepped away revealing the remaining days of school. The children’s excitement grew as the staff in the cafeteria began trying to quiet the to-be-expected emotion.
My neighbor is a teacher and I enjoy the countdown conversations we have…he is as excited as the kids are at the end of school…but the tiny black storm cloud of impending doom will soon hang over his head as he, and every other teacher, start the Back To School countdown.
Anyway…I received an email from my youngest’s teacher yesterday about his behavior. “This is a daily occurrence and is often filled with bad choices and conduct reports!” She tried to be a positive as she could be…This is the email:
As expected…he had a rough morning but was quick to tell everyone he had not had his medicine. By the afternoon he began to level out in his behavior. This will be a hard week for him with the anxious chaos filling the school. He will be re-taking the Math Test on Wednesday! “I love this next statement!” 4 More Days!
I am not sure if she is counting down till Summer or days until my son is gone. Let us hope that it anticipation of Summer!
For those of you who may not be avid followers of my blog…my son is a unique spirit that chooses to bounce like a Tigger instead of controlling himself. He gets frustrated very easily and his anger will explode into shouting matches and desk throwing. “The throwing of desks happened in third grade…and all parties involved had never seen a child act this way in school.” Having this young boy in our home for the past 4 almost 5 years has been like a test…with no Study Guide available.
With 4 More Days till Summer my husband and I have started considering some-type of vacation during the summer. “This is the first time, in almost 4 years, that we could entertain the thought of leaving the house.” So with my husband working and his desire to not sit at home doing nothing we will make some plans. It will be a new experience for us with 2 of our sons working full time and our oldest living across the state. We opened the floor for suggestions…”Hey Bud…where would you like to go this Summer?”

My husband and I looked at each other and asked him why he chose these activities. He responded very quickly with…”I thought I should have my own Bucket List.” There was no mention of Six Flags or Disney and Universal Studios…no desire to visit any amusement type park…We were blown away!
So I sit here writing as the house is quietly beginning it’s day. The school buses hum through the neighborhood and deliver the huddled masses yearning to be free! My husband has left for his short day leading up to his day off tomorrow. One son is off today and will fill his time with yard work…”I hate weeds!” I am waiting to hear from my teacher friend to see if she needs help today…4More Days! Sleeping in…relaxed schedules…
If it sounds to good to be true…It Is! Vacation Bible School planning and decorating next week leading up to a week of deliberate chaos. So for now I will hold closely the activity coming on the horizon…a family trip to the movies…Men In Black 3…and cherish the thought that I may actually get to my beloved Beach House this summer. Well…a beach trip is being planned!

I did not forget about writing this morning…I was just a little preoccupied with cleaning for a Pampered Chef Party. The funny thing is…the house was clean Friday and ready. Sometime between Friday and last night there was an explosion of dirty dishes, dust, clothes and unexplained collections of debris. That was only the beginning.
Yesterday I dropped off a prescription and my son said he could pick it up for me. I told him the pharmacy closed at 6pm…sooo…he left the house about 6pm to pick it up! I had to pick it up is morning and then take a pill to my youngest at school. “Wasn’t that a fun way to spend 25 minutes?” I was driving into the school parking lot when a scary thought penetrated my overloaded brain. “Food…what was I going to serve? Oh No! I forgot to get the ingredients for the Pampered Chef Consultant to demo!” So the rush was on…and I still needed to complete the spit shine cleaning. I pulled up the recipe on my phone and darted through the store…completing my mission I raced home. I pre-heated the oven…and vacuumed the remaining floors, then I turned to lighting the candles for atmosphere. The doorbell rang…and all that I had left was the dusting of one table. I was thrilled and ahead of schedule. The food was laid out and my special little plates were laid out for my guests.
I am able to rest…there is nothing left for me to do…dishes are all clean, floors are clean…I am tired!
WAIT! I need to fix dinner!

I am finally home from a day long trip to my home town. My niece graduated from High School today and for the first time in many years I drove beyond my parents house. It was fun to see all the changes and even more…what had stayed familiar and unchanged. Looking down the list of graduates was like looking at an old church roll.
After walking across my old college campus, where the high school graduation was held, I finally found all of my siblings and their spouses. We endured an hour of introductions and special music and finally started the handling out of the diplomas. BUT WAIT! Instructions were given 3 times on how to clap…when to clap…no noise makers!
“Please contain you clapping and cheering for your graduate until the entire row is complete.”
The third graduate stepped over to receive her diploma as cheers and horns sounded!
I am glad my parents decided to leave after my niece walked across the stage.
We gathered to have lunch together and celebrate the day…then we all went our own ways and headed home. I picked up a couple of things for dinner and a movie!
Who wants to cook? Not me!
And the movie called Joyful Noise that no one in my family wants to see…except for me!
So I will close…with comfy clothes now on…and my Almond Joy Mocha beside my chair…the movie is starting. Enjoy your evening!
With my latte’ in hand a morning ritual began. A mutual coffee lover and I were talking yesterday and as usual the conversation touched on the subject of coffee! Her husband had read that drinking this “Heavenly Brew will increase your life. “Drink more…Live longer!”. We were thrilled…but then the conversation turned to what things will still occur. It’s Gonna Happen Folks…No Matter How Much Coffee You Drink!
Things That Will Always Happen:
The sun will rise!
A cup to wake up with…maybe two!
We all need money!
Money and Coffee…a cup of coffee will always be present!
We all have bills!
Must have coffee!
Bills have to be paid!
Stressed? Have another cup!
There will always be people who annoy you!
A simple escape…coffee break!
Hoping this cup of coffee will fool my stomach into thinking I am eating!

I know there are more constants…but coffee will be with them as well! We can’t drink away our problems. We will always have situations that influence the way we live and we will always adapt. The fact is we have grown up knowing what lies ahead as we age…what responsibilities bring with them…how money evaporates, like a ghostly vapor, before putting it in the bank. We continue our journey and typically have a cup within reach.
What is a constant in your life? How does coffee( ok…I will accept tea!) help you deal with these daily situations? You know it as well as I do! Life…It’s Gonna Happen Folks…No Matter How Much Coffee You Drink!

The ever-changing shadows played as the reflecting glow moved them across the wall.
The lined pattern, from the blinds, resembled a music staff as the various notes appeared and disappeared on the shadowy sheet of music. The symphonic movement composed for just me, all while Watching the Shadows Dancing on my Wall!
The elegant sway, as the light glistened on the wall, moved like the shimmering beacon from a lighthouse. Steady and direct…lending of itself confidence for the weary. The trees slowly performed a beautifully orchestrated ballet as the shadows stretched longingly across the wall. The fluttering of soft fairy wings moved silently around the shadows as the slight breeze moved freely through the leaves. Quietly, I relaxed, Watching the Shadows Dancing on my Wall!
My eyelids grow heavy…my body stills as it is enveloped by a billowy warmth. Breathing slows it’s pace as the glow flows around the room. The sleepy sounds of crickets and waves accompany the shadows as they dance. Fuzzily I try Watching the Shadows Dancing on my Wall!
My eyes lose the battle and give way to the night. The shadows fade as the reflections cease. The night silents the busy day to allow for the body’s recovery…in expectation of a new ballet. I will awaken to still shadows as I begin my day. I will admire, for a short time, the sun-dial movements of daytime shadows as they stretch slowly over the floor. Memories will pierce into my daily activities and I will long for another night-time symphony. The melodic movements will calm my chaotic world and give me a time to quiet my soul.

It happens to each of us every day! Those little remarks that slip out of the mouth before bouncing around through the brain first! You know those little remarks…the ones that make you shake your head and wonder why that person bothered to get out of bed. But, how many of us would admit that we have let brainless pings fly out of our mouths…”Yep…me too!” “Here’s Your Sign!”
It was Sunday morning and I was standing on the staging area with a microphone in my hand. A member of the church walks up and waits to speak with the pastor and looks up at me…”You singin’ today?” I replied…”No…The mic stand needed to run to the bathroom and ask me to hold the Mic.”

I recently went into my local Starbucks. There was a line and we were informed that they were training. A few people left and I moved up…I finally reached the counter and the young man smiled and said…”Would you like coffee today?” Being who I am and the fact that a friend of mine was doing the training I smiled and said…”No…I would like 2 all beef patties, special sauce, lettuce, cheese, pickles, onions on a sesame seed bun please!” My friend the manager giggled and said…Here’s Your Sign! then she introduced us…This young man now calls me by name and has my drink prepared before I can pay!
I was making Enchiladas last night for dinner. Everything was on the counter as I began the assembling. My youngest walks into the kitchen and says “You fixing dinner?” wait for it…”Oh goody…I love your lasagna!” I smiled and said…”No, I thought I would see how long this would take to prepare and cook so I would know when to start it tomorrow!”. Here’s Your Sign!”
I have a son that works at a local gym. It is a large franchise with a specific dress code…complete with logo attire. He was coming from his office and saw someone he went to school with coming in with his dad. As he walked over to them as his friend said “Hey…you work here?” My son just looked at him and said Here’s Your Sign!” The friend could not believe he had fallen onto the trap.
These are just a few of the many “Here’s Your Sign!” stories from my family. Take a closer look and you will be amazed to see these brainless pings are bouncing through your life too. Please share…and Have a great day!
Sorry for the delay…I decided to enjoy my Mother’s Day with my family.
I had written earlier about the Pampered Chef desserts and wanted to give them to you. I hope you want to try these Just Desserts!
First up we have a Mock Lemon Meringue Cake:
Next was the Mini Chocolate Tiramisu Cakes:

I was also asked about my recipe for my Dump Cake?..Ask and ye shall receive! I made two Saturday night and they turned out wonderful. We ate one yesterday…”My hubby wants another one soon!”
The hardest part of this recipe is the opening of the cans!
For these two pans I used …
2 cans of crushed pineapple…drained
2 cans of cherry pie filling
1 yellow cake mix…divided between the two pans
1 cup of butter…1 stick for each pan
Dump one can of crushed pineapple in greased dish or pan
Dump one can of Cherry Filling on top of pineapple
Spread cake mix on top of fruit
Slice the butter on top of dry cake mix
Bake at 350 until done…the trick to the cake being done is the outside edges will brown…it will be a cobbler like texture. “Make sure you spread the cake mix out evenly to prevent a gooey clump!”
Serve warm…and you can put a whipped topping or ice cream with it!
I used light cherry pie filling and a sugar free cake mix…”You know…dieting! Let me know what you think of these recipes!

BBQ Chicken Pizza
2 teaspoons vegetable oil
1 small skinless, boneless chicken breast half
1/2 cup plus 2 Tbsp. barbecue sauce
1 (11-inch) pizza crust (14 oz. package)
1/2 cup grated smoked Gouda
1/2 cup grated mozzarella
3 tablespoons sliced red onion
2 tablespoons chopped cilantro
Warm oil in a skillet over medium heat. Add chicken and cook, turning once, 5 to 6 minutes per side, until just cooked through. Transfer to a cutting board. When cool enough to handle, cut into 1/2-inch cubes. Toss chicken with 2 Tbsp. barbecue sauce in a bowl.
Position a rack in bottom of oven and preheat to 450°F. Place pizza crust on a large baking sheet and spread with remaining 1/2 cup barbecue sauce. Sprinkle with half of both cheeses, arrange chicken on top, and then add remaining cheese and onion.
Bake until cheese is melted and golden brown, 20 minutes. Let rest for 5 minutes. Sprinkle with cilantro, cut into slices and serve hot.
